If you want something
that'll stick to your ribs this will do it. Our
recipe is based loosely on the old Boy Scouts favorite, Hudson Bay Bread.
This provides our fat, protein, carbs, and fiber. All round good stuff.
9 1/2 C regular oats
3 sticks of butter or quality margarine (not soft spread goop)
2 cups white sugar (experiment with brown sugar too)
1/3 C Corn Syrup (light)
1/3 C honey
1 tsp. of maple flavoring
Opt. add 1 C chopped nuts and/or chopped raisins/dates/dried cherries
The key to this treat
is preparation of the oats. Adding slowly, about a
cup at a time, add the oats to a food processor using high speed until it
looks like a floury powder. You should still see some oat flakes partly whole.
Cream all other ingredients
(except raisins, nuts, etc) in a large bowl.
Add the chopped oats a little at a time to the creamed mixture and blend with
large spoon.
Spread on a large cookie sheet or a couple rectangular cake pans about 3/4 inch thick. Press down with spatula evenly.
Bake at 325 degrees for 20-25 minutes. It should be bubbly and golden brown.
Right when you take it out of the oven press mixture down with spatula making it compact but not so hard it looks leathery. This will keep the bread from crumbling after it cools.
It's going to be dense
and heavy. Cut it into bars about 2 inches by 3
inches. Let it cool a bit more and remove the bars from the pan and place
on wire racks to fully cool. Wrap individually in plastic wrap or wax paper
and refrigerate until needed in larger zip-lock type bags.
This sure beats your average granola or "power" bar.
